What Is Your Favorite Knife Steel?

Overall it's pretty tough to beat CPM M4 HC

In the year since I've joined BF, I've been able to use a pretty wide array of steels, ranging from basic 420HC up to exotic 10V. CPM-M4 has been my favorite steel yet, and one of the few super steels to really blow my socks off. It sharpens up well, takes the most killer edge out of any of my blades, and doesn't want to lose that hair whittling edge. I hear it's tough stuff, too. I'm sold.
 
On my folders I like S30V and CPM154 mostly but I am warming to M390. For my fixed blades I like good old 1095, SR101 and SR77 as well as some laminated blades like those used by Fallkniven.
 
The ELMAX on my new 0551 impresses me more and more each time I use it. Probably my favorite steel right now, even over s90v.
 
5160 or INFI. Assuming a proper heat treat, these steels both take a hell of a pounding and wonderful edge, will hold it, and can be returned to that razor-sharp state easily.
Nothing against other steels, just these are my favorites in the applications I use knives in.
 
I recently fell in love with s30v in my paramilitary(btw thanks all you guys for talking it up) also ats-34,1095.I have cpm-m4? & m390? warming up in my closet.
 
M390. As I said before, a stainless M4 would be the perfect steel for me. And I can say with no false modesty that I had proven myself a prophet:thumbup:.

And while S90V has better edge retention, M390 provides just the right balance of ease of sharpening and edge retention. I also have yet to see a picture of a blade in M390 suffering from chipping. Quite some performance from a steel at Rc 60-61(don't believe one would ever reach Rc 62 without a custom heat treat).
 
After todays "fire making with minimal gear" skills test (gotta love rainy BC!), I'm going to say CPM 3V is moving up the list real quick as my favorite. I'm not even going to strop my knife tonight; it's still shaving sharp with zero edge problems after an entire day of wood working.

8Cr13Mov is also an odd favorite of mine. Best "cheap" knife steel on the market right now, if you ask me. Blows AUS-8 and every "400" series steel I've used out of the water (with the exception of maybe 440C) for a comparable and usually cheaper price. Right on!
