What is your favorite thing to do with a knife?

In order:

Pick a good knife with a mediocre/poor edge.
Reprofile & sharpen.
Strop it as close to perfection as I can make it.
Use it (for whatever task may come).
Strop it some more, and use it again!

I like to sit around with a highball of scotch and slowly sharpen up a knife. I've got a little system of a Smith's tri-hone sharpener, followed with a leather belt loaded with cheap green compound. Depending on how much scotch I put down, the edge of my knife will either be sharp and scary, or require more time to fix it up.
