What is your favorite type of grind?

Convex - definitely.
Very sharp, best cutter, best chopper, best stability, won't chip, won't get stuck in anything because of geometry.
And, misque, sharpening is no problem if people know that you have to do it in the OTHER DIRECTION, not like a cutting motion away from you but by dragging the blade towards you with the edge away from you. It's soooo easy.

High hollow ground for me. If the steel would hold up I'd want a straight razor configuration. I'm not really happy until it shaves as well as a straight razor (come to think of it I'm not all that happy with my straight razor). For thin utility knives a full flat grind works well.

Convex grinds are for axes. I've got a Blackjack knife that I need to hollow grind one of these days. It was a real pain to sharpen when I got it used. That's the reason the previous owner dumped it for a cheap trade. The only time a convex edge is easy to sharpen is when it only requires a very small amount of honing. While it is now shaving sharp, so are my hatchets.

Chisel grinds are for chisels. A chisel grind doesn't even cut straight.

for most knives, i prefer a flat grind. it is thin enough to really slice and i have little if any fear to do some medium work with it. but i'll also take a nice high hollow grind. as dr. lathe pointed out, there is very little difference. for a field knife that i expect to use and abuse, i'll take a saber grind.

Thank you for reminding me of that method.
I have three belt sanders and sometimes I tend to forget you can sharpen a convex edge quite well in the manner you mentioned. I've done it before.
I've become spoiled because it is soooo easy to go out and hit the edge on the slack belt sander and/or the buffer and I'm ready to roll in about a minute with a surgical sharp edge.

1 is a thin full convex. For those of you who like a full flat grind you will love the full convex grind.
