What a Thread! I know I should'nt be look`in at this during the almost supper time hour... But ok, I recon I just have to chime in too... Here is my CAMP COOK`EN[to qualify in this thread] favorite:
~~ BUCK & BOURBON ~~
This is a Venison stew recipe, and is done on an open flame in a skillet, or atop a pot-bellied-stove in a skillet if your cabin bound... But son, on this light tackle, you will lick your chops just as much if you use Elk, Moose or any red meat.
<> 2~3 lbs. Venison cut in 2 inch cubes * * * <> 2 cloves , garlic diced
<> 5 Tb. Flour * * * * * * * * * * * * * * * <> 1 cup homemade tamato sauce
<> 1 tsp. Salt * * * * * * * * * * * * * * * <> 1/2 tsp. rosemary
<> 1/2 tsp. pepper * * * * * * * * * * * * * <> 3~4 [maybe 5

<> 3 Tb. lard or fresh butter * * * * * * * * <> 1 cup water w/bouillon cube
<> 2 medium onions * * * * * * * * *
<> 1 green pepper chopped * * * * *
In your skillet w/ lid for later, brown over low to medium fire the meat cubes shaken or rolled[meat should be well covered in flour] in the flour, salt and pepper. Do not crowd the meat chunks, but brown in the fresh butter or lard and remove each as they are ready,[do not over cook]then set aside to drain a bit...
Saute` the oinons, green pepper, and garlic in same skillet with all those great meat dripp'ens{the secret to this stew

Add the browned meat chunks and remaining ingredients, cover w/lid and simer slowwwwly for about 1.5 ~ 2 hrs... Check it about every 30 minutes to make sure the stew pot retains its liquid {important} ...
Enjoy it with five (5) more folks... Feeds a total of six (6) altogether...
This is a tried & true recipe that I started back in the 1970's after getting it passed to me from an old hunter and trapper team of fellows that were true mountan men, from the standpoint of living off the land they loved so much... I have cooked this good pot up many a time and never got a bad batch... Make sure you follow it as I have stated... But like all good cook`en grub, feel free to add some additional veggies and spices or what ever you think may improve it. But the basis for the best game stew you will ever enjoy is listed above.
