Guy who sold it to me said it was black ash, IIRC.

It could be black ash burl. I have a Godfather in black ash and it looks just like yours. I'll try to get a pic up after work.

I made the handle. It was about 5 years ago. I bought a ready-made blade blank and some handle scales. I did not have the sense to protect the blade while I was attaching and shaping the handle, so I scratched the blade a little. Still not bad, considering my level of experience at the time.
 
Looking at the heavy grain definition on the front of the handle in the second to last pic leads me to say ash. Maple grain is far tighter than that. I have about 200 BF of ash in my shop right now and it looks exactly like that.
 
I will post this a day early.

There is a positive test:
Place the handle in the HT oven and ramp to 1000F . Hold for two hours.
Check results - it will almost surely be black ash.

Seriously, it looks like black ash burl. I used to use a lot of it but my source dried up.
 
The color might look like maple but the grain does not. Looks like Ash.
