I would grab a Opinel with ebony handle and Polished Inox blade!

Right in that price range.

Slicy, Light as a butterfly, Strong. Just plain neat!
 
I'd like a BK5 and/or BK15.
For your situation, I'd look at the Case SwayBack Jack. I have one in CV and it's, by far, my favorite traditional.
I would've fainted if my kids picked it out for me. Since they didn't, I picked it out for myself... last year.
Still plenty small for carry, but a little bigger than a peanut, makes it much more useful in my book.

A little bigger and tool-ier, I really dig the SAK Alox Farmer.

seconding the CV swayback jack, about the best thing going in your price range.
 
Maybe add note to the knife telling him how thankful you are to be marrying his daughter, blah blah blah, and it will magnify the value of the knife.

I think that if I were in your situation I would buy him a Case Amber Bone 6318 Stockman with CV blades. It's well within your budget and the Stockman pattern has been very popular for many years for reason. They are super versatile with a lot of cutting edge in one package. It's most likely a pattern he will recognize and hopefully feel comfortable with.
Plus at 3 1/2-3 5/8 closed with round bolsters it is a pretty comfortable carry. My 2 cents and good luck to you.

As for me, I hope to get a Blind Horse Knife Camp Muk or Lil Muk.
 
Ended up getting him a Opinel no. 6 with bubinga handle and mirror polished SS blade with a decorative W engraved on the blade. It's a nice knife, but I had a hell of a time getting it sharp on my sharp maker. I was able to put a razor edge on the carbon no8 that I got for myself, but I tried for hours on the other and didn't get very far. Any suggestions?
