I don't have one particular knife that I always carry. Instead, I just do the restaurant menu thing - pick one from Column A (SAK/multitool) and one from Column B (folder/small fixed blade). It depends too much on what I'm doing. Plus, I enjoy the variety!
I always carry my large Classic Sebenza, along with a SAK. If I'm around town or at work, the SAK is a Cybertool 34. If I'm in the outdoors, the SAK is a Tradesman.
The only real exception is semi-formal occasions. The talonite EDC does the job at these times.
Formal occasions? Nope. I don't go to them. People complain too much about my Levi's 501s.
My only custom folder was bought so I could have exactly the knife I wanted to carry. I usually carry more than one knife, but this one has been with me all the time since the day it arrived.

To work (office), a small Sebenza. Away from work... A large Sebenza if it has to be a folder, otherwise one of several fixed blades, all small shop or customs in the $100-$150 range. Most often of these tends to be my Tim Johnson 4" utility/B&T.
