A lot of these suggestions are on the expensive side. No need to start by paying a lot of money until you're more familiar with the companies and their products.
I like the RAT Cutlery line myself and the prices are reasonable, but you can do even better on price and get a knife designed centuries ago for "man vs. the wild"
A puukko. See www.RagweedForge.com for an incredible variety of mid-size, hard-use, relatively inexpensive knives. I like the Finnish models myself, but the others are really just as effective.
