Grandad's old Dexter boning knife. Carbon steel, of course. Cuts like a laser.

Rapala fishing knife which, by the way, makes a wonderful blade for kitchen use. Try it, you'll be astounded. WM has two sizes, I favor the larger one.

We have a 14" Forschner professional kitchen knife, that I bought years ago before I knew what I was doing with knives. It's a little long for carving, but I'm used to using it now, so I keep it around for the holidays.

thx - cpr

I'll be using this Case knife. It only gets used for the Holiday Turkeys.

Happy Thanksgiving!

My grandfather's carbon steel carving set from the 1890's.

Nothing too fancy, I stick with my old Chicago Cutlery carving knife. It doesn't have much "wow" factor, and it's not yet old enough to be an heirloom or anything, but I love it, and love using it!

Cheers, and happy Thanksgiving
Jon:)

9" Shun carving knife that is a housewarming/Thanksgiving/Christmas present to my grandma, and is going to do its first cut tomorrow!
