What knife to Carve The Bird?

I used a Fallkniven S1 to cut the christmas ham last year so maybe a MC1 could be good for this year :)
By the way, it didnt really work that great. The blade was sharp enough and well that, but it was too thick. I used it slicing potatoes for "Janssons temptation" but it was like using an axe, the poatoes were split, not cut.
 
I used my Takeda Gyuto to carve up a very large Prime Rib, and it was a joy to use. There is something about an ultrathin edge on a 10" knife just taking off slice after slice with almost no effort. It is at 4 per side with a 10 per side microbevel, and after completely disassembling the Prime Rib (and avoiding the bones like the plague) it still tree tops arm hairs and is asking for more cutting. My Mom was very happy I showed up to carve up the meat, as she has pain from using her dull as a spoon knives to do that work. I think an AG Russell Japanese knife set will be my present to her, as my parents knife set it just plain worn out (and would take me an eternity to sharpen without a belt sander). She was amazed by the ease of the cutting, and my brother was spooked when I washed off the blade and accidentally took a ultra thin slice off of the sponge when I was washing it off. Thank you Thom Brogan for talking me into this Takeda Cow Sword, it really is a joy to use.

Since I was at my sister-in-law's place, I used a combination of an electric knife and my Spyderco Military.
 
Who needs a knife when you got THESE!!!!!!!!!
