What Knife would you Choose?

I always recommend an alox Swiss Army Knife on threads like this. I'm a broken ol' record but at least I'm consistent... :)

I agree. I would have to go with a one hand Trekker or Farmer. Daily carry and outdoors use would be covered. Although it wouldn't be ideal for field dressing during hunting season or filleting catfish, I have used one for both tasks.

Hopefully your little scenario would not include kitchen tasks.

These little knives are very underrated in these days of overbuilt locking folders. Before I got into knives and fixed blades for outdoors use I carried a Victorinox Tinker and/or Leatherman PST for many years and used it for almost everything.
 
For a more original option there's something like this Uzbek traditional knife. That style of knife is called the Pchak, it can do anything from prepping food to skinning animals. This is a more modern take on it, but you get the idea:

Isn't the Mini-Grip about $20 over budget?? Enduras are about $60, like the Blur. I actually like the Endura, however, lol. :D

Not if you look around. You can get mini grip in the budget used/pre-owned. That is what I would do. That way you can shop beyond the budget without spending more money. Got my ZDP-189 Endura used for the cost of a new VG-10 version. Not sure what the fancy blurs are going for, but really any Blur would work really. One of my favorite Kersaws. Wish I still had my Red one. Also passed on a red OCC version at a gun show that I still regret.

And my recommendation is excluding Kitchen knives. I do the cutting in the kitchen and would not be able to settle for a folder in the kitchen. Could it be done? Yes. But I like my kitchen knives too much already. If we are talking kitchen folder, an Endura would be a good choice for long blade with good grind.
 
I'll take my OXO Good Grips paring knife. I can use it for any food prep that I need to do, even though it's nicer to have chef's knife sometimes. The paring knife is compact and lightweight, which means I can make a simple sheath for it, stow it in my mess kit, and take it backpacking.
