What micron size for stropping?

I agree that there's a pretty good spread of grits that will get the job done. If you want a one-and-done bottle I'd say that 5-7 micron is great for deburring, especially if you're not regularly doing a high polish. If you do higher end kitchen knives or like to do a mirror polish on folders then 1 micron might suite you better. It's still aggressive enough to abrade the burr but still fine enough to refine the edge. Personally I like a double sided strop with 7 micron on the rough side and 0.25-1 micron on the smooth side (and make if kangaroo leather if possible!).
Been thinking about making myself a new strop the old one I made is wearing out. You got a good source for a nice size piece of kangaroo leather? (unrelated but hook a brother up with a good spot for water buffalo leather too if you know one).
 
I buy my stop leather here. Looks like they have water buffalo but no kangaroo

 
I checked on Roo leather a few years ago and found that they have protected them and Kangaroo leather is no longer available. Would love to have a roo strop…

I ordered mine from Paul Lackey/PL Knives. He ordered it in at my request and made up a batch but I'm not sure he sourced it. Lots of vendors sell 'roo leather 1x6 strops so it must not be too hard to get.

Interesting… I wonder where this leather comes from if they’re protected?
At any rate, if anyone knows where to get a 1x30 strop I’d love one…

While "protected" millions a year are still slaughtered, err, I mean harvested, gotta read the fine print.

They're not "protected" in the same sense and definition as (for example) US protected species. This causes some misunderstanding.

Their protection only really means that you need a license to hunt them, you can't merely eradicate them as a pest.
 
I generally use a dry strop. The main purpose of stropping is to remove the burr, and restoring the edge by straightening any slight rolls.
(stropping will generally restore your working edge. That "razor edge" "everyone" seeks is a waste of time and blade steel. It is usually gone by the third or fourth cut or slice.)
A diamond paste really isn't needed. At most, I might put some green polishing rouge on my strop ... tho never if using my belt or top boot for the job when afield.
