I use an edge pro apex because half of these don't work. diamonds are not for steel they are for ceramic knives and strops wear for getting the moisture off of a straight razor and will only roll the edge of your knives. i use the 4 kit and polish it up to 3000 grit

Diamonds are used fairly heavily around here, they seem too get my steel knives really sharp, I must really have no ideal what a "sharp" knife is because after I use the "wrong" stones, I then screw up again by stropping my knife (and rolling my edge) on a leather strop. I guess I got lucky and the KME is one of the systems that actually work
