What size steel should i use?

My vote for 1/8" in 1084 it is good stuff for beginner and advanced maker alike. My advice is go small in begining. No 1/4" stuff or huge blades. Getting 1084 (NJ Barron does not have 1/4" in stock right now) can be a pain sometimes. It can be replaced by 1080 (Admiral has it in stock) as HT is the same. I do think that 1084 produces keener edge and is worth the wait. If its your first blade you will not notice any difference in HT or preformance.
 
Hey beast, steel is rolled on big presses as part of production. It's either hot rolled, or cold rolled.
