what steel should I use?

Hello,

I am new to these forums and knife making in general, and I am not sure what type of steel to use. I want to focus on making slip joint folders, but for my first project i am trying to make a kitchen knife for a friend. If anyone could recommend a steel for either of these projects that would be helpful.

Also, I am from New Haven, CT, so if anyone can recommend a place for purchacing the steel, that would also be helpful. thank you.
 
The steel you use will depend on your budget and if you want to try to heat treat it at home or send it out. Stainless steel is going to be more convenient in the kitchen but will require you to send it out. If you want stainless, 440C, ATS-34 and the like will work just fine for a first knife.

If you're wanting to heat treat yourself or you want a cheaper steel, 10xx series steels like 1095 or 1084 will be good. They'll just get a patina and possibly rust if not taken care of. 15n20 seems to be somewhat stain resistant and also an oil hardening steel and will work well in a kitchen.
