What technology/conveniences could you possibly NOT do without?

Antibiotics.
There's a reason our longevity has become so lengthy: modern medicine.

A couple centuries ago influenza -- something we think of as a serious nuisance today -- was pretty much a death sentence.

Even a simple infection could result in loss of limb, lifelong debilitation, or death. I don't like the idea of dying from a hangnail that I ripped out; that decided to get infected and get out of control.

Got rid of the cell phone 10 months ago. Was real hard at first, but now I only miss it every so often. What"s nicer is not paying that damn bill every month.
 
I really would like an AC and a fridge/freezer. I can't sleep when it is above 80 around me.. at least not comfortably at all.
 
A fridge/freezer would be high on my list, too.

That's not a problem in the winter.
It's not too big a deal if you can find a cool stream.

It can also be counter acted by smoking/curing any meat. Years ago if they slaughtered a cow or pig in Spring/Summer here; everybody in the hollow would get a little of the meat, just so it wouldn't go to waste.
Most of the time, though, animals wouldn't get slaughtered until winter so that the meat could be kept.

A/C isn't too big a deal either. If it gets too hot in the house, sleep outside.

I lived off the grid for almost 2 years here before new responsibilities caused me to change that. The one thing I found myself missing was the air conditioner and fans in the hot summers. It did give me a whole new appreciation of the cool rainy days though and taught me the value of awnings :) . In the cooler months I had no complaints. The only modern technology I had were oil lamps and a cell phone. I sometimes miss those days.
