What the ESSENTIAL knives that everybody should own/collect?

Collecting it to different to each persons taste, but my list of must"owns" would be:

1. Buck 110.
2. Victorinox SAK (preferably a Fieldmaster).
3. Good quality 3 blade Stockman.
4. Blackjack Trailguide.
5. Benchmade 735 ARES.

A Buck 110 or a well made variation of their classic design
A good quality 3 blade stockman, definitely agree.
A Victorinox (my preference also) SAK, something like a Ranger IMO
A well made bowie that can be used for a good camp tool
A well made tactical knife for EDC

After that, your own personal preference.

I Second this post. I think it really answers the original posted
question. The only think I would add (especially if you enjoy
cooking) is 2 or 3 kitchen knives of your choice and a multi-tool.

The ESSENTIAL knife that you have to have is the one you always meant ot get and have just found out that it's been discontinued. That's how I got my Becker Magnum Camp and Cold Steel Bush Ranger and I know I would have regretted not getting my hands on those two.
