I've definitely been bitten by the knife bug!

However, is there anything cool you can do with them besides oooooohing and ahhhhhhing over their beauty and cutting paper?

I can at least go target practicing with my guns.
 
Try cutting a sandwich with your gun next time you're wondering what to use your knives for. (Don't actually try to cut a sandwich with any kind of firearm. Well..maybe one of those axe pistol flintlocks if it's unloaded and you're a very odd person....)

How old are you? The answer to that question will determine the advice given to you. Other then this and everyone should abide by it. A knife isn’t a toy it’s a tool. If you have to ask what to use a knife for then chances are you don’t need to carry one. And if you have to be told that I doubt you need a firearm either because that demands even more knowledge and respect.
 
Knives are tools not toys.

If you wanna do something cool with a knife, get a carbon steel stockman and go whittle something.

Yeah I guess so, I've just never thought I needed to do something " cool " with my knife.

The only things I can think of that would be considered cool by some would be whittling, flipping a balisong , and playing 5 fingers.
And the last one is just plain stupid.
 
By a Busse, Swamp Rat, or Scrapyard and start chopping and/or tearing things apart.
Use your high end folder in place of a utility razor.
Buy throwing knives for target practice.

Most knife geeks' "fun thing" to do with their knives is look at it, study it, appreciate it, feel the action, sharpen it, use it everyday and so on.

There's not really this one thing/ event. A higher end blade is just an enjoyable thing to carry and use for my daily cutting tasks instead of utility razors and scissors. Kind of like how you don't need a Rolex to tell time or a Ferrari to drive somewhere.

If you don't get that "oooooh aaaaah" thing from your knives, or if that "oooh ahhh" thing isn't reason enough to buy a nice one, I'd just get something practical that works like a kershaw or Spyderco or even just a Stanley razor and save your money for guns and ammunition since they seem to be more fun for you anyway.
