Oh man!! Bob, those Bruckmanns are gorgeous (and I'm not usually a corkscrew fan)!! :thumbup::thumbup: Are a lot of the covers acrylic? Those kind of "marbled" or "swirly" ones look fantastic! (The wood covers are also knockouts) I don't think I've even heard of Bruckmann knives before, and now I have a deep yearning for one (or more)

The man-made handle materials are most likely all celluloid. The bottom knife with the gray has my favorite celluloid pattern, "cracked ice." The lower left with the light bands is a common celluloid most often referred to as French Ivory. The two with the solid color may be celluloid, or they could possibly be some type of plastic.
Four or five of the remainder are cattle horn. Some examples I have are obviously cattle horn, while some others are probably "cattle horn celluloid"; I can't always tell.
Not all Bruckmann knives have corkscrews, but the brand is known for them. Here's one without:
