What Two Knives Do You Use the Most

So I was sitting here the other day reading through a "what knife would you use if ..." thread when and I started to wonder what knives actually get used the most.

I don't want to hear about what two knives you would use if you were stuck in a swamp surrounded by poisonous snakes (or any other Bear Grylls scenario for that matter … unless that is what you do for a living). I want to know what two knives you turn to the most on a weekly basis.

As for me:

#1. Benchmade 551 D2 Griptilian "Mini" (from Cabela's). As of a couple of months ago this has become my daily carrier. The D2 is a pain to sharpen but is phenomenal at holding its edge.

#2. JA Henckels 7" Santoku. This was actually a bit of a surprise for me. However, when I started to pay attention I realized that my second most used knife is the one I like to use the most while in the kitchen.
 
1 - recently it has been a BM Rukus; its a huge knife and very stout, but pockets easily in my usual casual attire.

2 - LM Wave or Vic Explorer SAK always rides shotgun. Today I have both.

I use my Spyderco Police alot, it rides in my pocket everyday. When I am outside I carry one of my own fixed blades. I have used that one for over 11 years and it is on the belt more often than off belt.
 
Right now it's a custom by Tom Krein (TK-11) in a Paul Long sheath.

Second choice is a Zero Tolerance 0302.

On the weekends, it's a Benchmade Skirmish.



Now, just his week I picked up a Kershaw Junkyard Dog, partially serrated, and have been carrying it EDC. Love the handle....but the blade leaves me wanting a bit.

I turn to the above for 90% of what I do.

And yes, I do use my EDC knives...HARD....have to be tough.
 
Right now:

1: Byrd Cara Cara

2: Busse AD

My military, sebenza or Lightfoot would usually take that #1 spot but I have been going on trips alot and can stand to loose the Cara Cara but not those other 3. The AD has gone with me everywhere after work.

it's a true workers knife. holds an edge like nothing else, takes alot of abuse, been buried, and found two weeks later, it's a knife that just doesn't die. i have no "real" use for any other knife, i just have an addiction for collecting them.
 
Spyderco Caly III. Spyderco Ladybug (keychain).

They're on me the most often, so they get used the most.

If I have pants on, then I have a Case 6347 stockman in my right front pocket. While that is the tried and true EDC that never gets left at home and handles 99.9% of any cutting I need to do, I dug through the shoebox the other day while moving and have been wearing a Leatherman Charge on my belt lately. I feel pretty covered for most cutting tasks that come along. I used both extensively the last few days for making and breaking down boxes and other moving chores and never had a problem.

And like you, gel99, My second most used knife is also a kithen knife. My favorite probably a Global 8" french style chef's, Henckles 6" chef, or Wustof sheepfoot parer. My next kitchen knife purchase will be a custom, as I replace some cheap chinese forged kitchen knives(which, after three years, have held up quite well) I got through one of our food service distributors. One of Mr. Koster's knives perhaps?
 
My kitchen knives probably get the most use:
Mac Professional Series:
6.5 in. Santoku (MSK-65)
3.25 in. Paring (PKF-30)

A Japanese Kakagata Nakiri (Vegetable Knife), Brand? Possibly Tojiro.

My EDC are:
Kershaw: S30V Leek, or Needs Work.

Work Blade:
Bard-Parker #11
 
Easy question.

1) Ritter Grip, S30V (would be M2, but couldn't find one!)

2) Used to be a Busse GW, but have recently become dependent on a Busse AD.

3) Don't use a chopper as much as I'd like, but when I do it's a Busse FBM (Fusion Battle Mistress) or a Scrapyard DF (Dog Father).
 
This is interesting. I had expected everyone outside of First Responders or the Military to list a small (3" or less) folder as their most used knife. There are a lot more fixed blades and larger folders listed than I had expected, including one individual whose profile seems to indicate that he is a chef and who, none the less, listed a Busse FBM as his most used knife. I wonder what people who are engaged in the 9 to 5 grind doing that makes a larger and/or fixed blade a practical option?
 
Ditto on the Henckel's Santoku as my #1 kitchen knife. I now use it more than my Henckel's 7" Cook's Knife, which was my #1 for many years.

In my pocket is usually a little SAK with a red lite and a ballpoint, among other things. Very useful.

Can't carry a bigger knife in the office, but otherwise have a CRKT Crawford/Kasper folder, the big or little, depending on situation, or an ancient Gerber EZ-Out when lightness is paramount.
