What Type Of Knife Steel Do You Prefer and Why?

Gerber Applegate-Fairbairn Covert uses 154CM and opens like a breeze. I had to put a new edge on mine because the factory edge kept chipping. Don't know why and other folks don't seem to have that problem. The edge that I put on it is doing fine, no chips. I find that 154CM is easy to sharpen on bench stones. I use the hell out of this knife working out in the barn and it stays sharp for quite a while. As far as size goes, it's on the small end of what you're looking for but that means it rides well in a jacket pocket whereas the 5" and 6" blade folders don't always fit. The pocket clip can be attached to either side and it carries thumb stud up, rather than pommel up. It also has a lanyard hole, if that means anything to you.
 
For me it was S30V (Benchmade Ritter Large and Small, Al Mar Sere 2k Ops and CRK Sebbies) until recently when I discovered/rediscovered VG10. Now the S30V's are becoming fewer in my collection and the VG10 numbers are growing. My first VG10 was from Fallkniven and I just put an order in for an Al Mar in VG10.

We'll know soon how the Al Mar fares with me. It's going to have to live up to or surpass what I have come to expect based on my great Fallkniven VG10 experiences. I sure hope it does! If the Al Mar VG10 makes me as happy as the Fallkniven VG10 then I just may have to try out a Spyderco VG10 as well. ;)

I havent tried an O1 or BG-42 yet but I'd like to. I dont care for S30V, ATS34, 154CM, the 400s, the AUSs, and any of the other cheap steels.

If cowry is as good as the ZDP I'll probably add it to my list too.

& there's Emerson using that cheap 154CM.;)
 
Lately I've been really loving the H-1 steel used by Spyderco.

It all started with the Salt 1, which I gave to my knife-tester (my wife), to carry for a while.
She usually carries a Delica so the Salt 1 was'nt a big change for her, except I told her it was virtually rust-proof.
She is my designated "knife tester" because she does'nt love the knives like I do.
She does'nt hesitate to cut up gunky sticky tape, she does'nt seem to care if a staple is under the tape, she hardly ever cleans her knife, and she never sharpens it either.
I let it go for about a month and then I checked it out.
It was only slightly dull and could still cut newspaper, so I let it go another month.
After two months, still fairly sharp.
I asked her if she was using it much and she declared that she cuts something nearly everyday.
She also likes it better than the Delica because of the larger thumb-hole.

Later I got myself an Atlantic Salt.
After awhile of using it myself, I have found H-1 to be rust-proof (so far), able to aquire a very keen edge, able to keep that edge for a very respectable amount of time, and it is easy to sharpen.
I also have'nt had any chipping so far--chipping was a bit of a problem with my older Spydercos with ATS-55.

Now I EDC a Pacific Salt and I'm going to really put the H-1 through its paces.

I live in the Everglades.. 440, highly polished, is a good thing.
I prefer carbon but not the way I live ( fish farmer)
Maybe I should say " Swamp Rat" but that could be sacrilidge :yawn: :rolleyes:

I should have qualified that. I was saying cheap steels as in the 400s and AUSs. I do not consider S30V, 154cm, ATS34 or any of their CPM counterparts cheap.

Speaking of emerson. They made the only knife I ever used that failed. ;)
