Knives that have a beautifully sculpted sweeping plunge line....Ruined by a secondary sharpening bevel cut right in the middle of it.
 
Love. 1080/1084 I use 1080 maybe 20-100 times a day. My Channel Lock Pliers are made of 1080. Rust schmust. Other than once or twice a year I NEVER have them rust.(scotchbrite and they're good to go)I use them in water environments daily.(I'm a plumber) Patina? Yes! My biggest dislike is people badmouthing simple carbon steels. Cuts awesomely, easy to sharpen.

Another love? Unique bladesmiths. Guys who follow their muse. Here in Shoptalk, Patrice Lemee',Trypper, and any others who make what they WANT to make.

Hate? Hmmmm. Cheap Chinese knives.
 
Love? A lot of different styles of knives, including many that I would not choose to make. I really like natural handle materials as long as they are some color that occurs in nature. i am indifferent abou some things like jigged bone, but such things have there place IMO.
Hate? Cheap ugly knives, expensive ugly knives, mid-priced ugly knives........you get the point. I HATE wood that is dyed a color that is not normally seen in nature.I hate the smell of micarta when grinding it and the look of the brightly colored laminates. Pakkawood makes me want to go shoot up a McDonalds. Paracord handles........don't even go there. I also dislike clunky knives, even ones that are done well. One thing that has been really getting on my nerves lately is bad damascus. It can be cheap Pakistani crap that won't even fully harden or the low layer count stuff that you see some of the big kitchen knife companies pimping. According to them, all you have to do is wrap up a stainless core in some lame soft low layer damascus cladding and you have Excalibur in your kitchen for $129.99.
