I've always heard that spyderco had the best S30V

That's my experience as well. I find that somehow it sharpens better than ZT S30V as well.

It's the same steel, it's heat treatment and edge geometry that make the difference. Also the machinery used to factory sharpen the edge plays a big role as it needs to properly cool the edge not to ruin HT.
