Part 2

The standout dish of the night: perfectly cooked juniper smoked squab with pistachios, cherry, verbena sauce, and fermented raspberry sauce. Confit and barbecued leg and breast with anchovies on the side. Also came with a mystery chocolate which I correctly guessed was filled with squab liver (and lingonberries).

Not sure why they stand out but that horseradish oyster and catfish soup sound delicious right now. Everything looks incredible. Thanks for sharing.

Lunch today at my local taproom . . .

a Pepperoni Flatbread with a West Coast Double IPA (8.3% ABV) called "Disrupt the System" made by an brewery named the "Tenma Beer Project":

The beer keep put the hot sauce on the counter but I only asked for & used used red pepper chili flakes on the flatbread. ;)
