What's your EDGE level?

Well, my new murray carter just cut light... so i would put that knife at an 11... My umnumzaan is probably a 7-8 at the moment, but I like to keep it at least 9.
 
A toothy 7.5 for basically all non-operation blades. My set of tests is cleanly shave hair, bisect a paper towel tube and cleanly whittle on "Alberta ironwood".

All manicure blades or smaller slipjoint blades need to be a finer edge for when I operate on myself, but for anything else the edge is gone too fast.
 
Most of mine stay at 10 or beyond, but never drop below 8.

10 most of the time when I have propper equipment, in the field for long periods of time and I maintain at least level of 7 as a micro bevel.
 
I sharpen it to about an 8-9 and then sharpen it again when it falls to a 5-6.
That's pretty much where I am. Of course I can get them sharper but I use them and I don't like edges that don't last.
 
On a scale of 1 to 10, my folders are approximately really sharp. My fixed blades only ever seem to be fairly sharp. One of them has a really bad sheath so it's almost always dull.
 
My EDCs stay around a 7-8 and I resharpen them at the 5-6 level. I don't need a super sharp knife, since 99.9% of my cutting tasks are tape, vinyl bags, and zip ties.
 
7, I'm not good enough to sharpen beyond that and don't want to scratch/screw my knives up to practice. I need to get some cheaper ones I don't care much about until I get better.

Realistically some of mine are sharper than others also, according to blade grind angle, blade stock thickness, heat treat etc. I have an old Becker Brute that is a broad shouldered beast and a beeotch to sharpen. On the other hand my hollow ground JAB Potbelly is super easy to sharpen and takes an edge like a straight razer. As I said, it really depends on several factors for me. And, some days I have the patience to do a better job than others.

I think you are selling yourself short. That murrary carter would deserve a 105.7 at the very minimum.
 
I usually like to start at 9-10. I am not satisfied unless I can shave cleanly with very little pressure, and tree-top the hair on my arm.
