G10 for folders for me with cf right behind it. But if it was possible, I'd take wood from Bill at Backwoods customs work on any knife I could get. His work is a thing of beauty and one day I will have one.
For a knife that's actually going to be used, it's very hard to beat rough textured micarta, super grip but not abrasive. G10 or CF if it's peel ply isn't bad either. Wood can be okay depending on finish/grain. Smooth CF, G10, metal etc. all suck for anything but looking pretty.
I think it speaks to how few consumers are really concerned in the actual functionality of high end knives. Handle materials like smooth Ti and polished CF simply suck when it comes to providing any form of tactile grip but are all the rage with buyers.
Textured G10, but not the high-grip stuff. CF could also be decent if done similarly, but is more prone to separation and splinters. The bonuses to G10 include: hard-wearing, waterproof, decent grip, easy to machine, good looking, relatively-inexpensive, etc.
Metal handles are the worst. They are too slippery even if they have some texturing.
I prefer g10 and micarta to titanium/SS/wood... growing up cleaning fish or skinning deer/squirrels on a whim I have a great appreciation for every ounce of grip you can get especially when wet or bloody...
