Sorry to wake up this "old" thread. I would just like to share a video I just found by coincidence.
Cliff is sharpening his knife on the brick but toward the end of the video (time 6:50) he explained the nature of this "evil" low quality advertisement paper... cutting it along fibers and cross fibers.
Among all sharpeners I have seen on Youtube he is the only one mentioning this.
Interesting.
