Whats your favourite stainless steel knife?

Hmm.

S30V and S35VN are as good as people say they are, but (for me, anyway), harder to get a really shaving-sharp edge. I suspect I'm not stropping properly.

154CM/CPM154 continues to hold it's own.

I think we've gotten to the point where gains are incremental, and real progress in cutting performance requires a complete approach to understanding the heat treat process and bevel geometry. IMO, cutting performance is %20 metal chemistry, %45 bevel, and %35 heat treat.

From all I've heard, Survive! gets the process right, though.

in marketing we call it point of diminishing returns :) .it means after a point, equal increase in dollar spent is far greater than increase in performance under most conditions/holding all factors constant.
lot of audiophiles also use this term and have same problem that after a point..investing in more expensive cables and speakers does not lead to same higher percentage % increase in performance.

after all my research coz i m economic lately, i bought benchmade grip with 154CM and so far steel has outperformed 420HC in every department and made 420HC look like a soft steel.
once you can see that jump in toughness and hardness of steel like you never saw, you have reached your personal point of diminishing return.
people who buy $200+ knives are buying it for the luxury/premium need and not really for pure utility with reasonable amount of joy of ownership.
 
Believe or not, the steel used by William Henry (SS damascus over ZDP-189 core) is sharp as heck and really holds an edge in my battles with cardboard boxes (see below photo). But I also hear Stellite 6K is a great steel that I have been on the look-out for.

Favorite stainless knife is rather difficult choice for me.
I have an XHP knife that I have been using a lot and liking what I am seeing.
I have the first knife I finished in S110V that I am quite partial to.

However, my current favorite knife in stainless would have to be this "Scrapper" that I made using S125V.
This steel is just so amazing in the way that it cuts and holds a killer edge forever.
I have used it for all sorts of home, field, and camp chores and the S125V is amazing.
