Convex or V? Which do you prefer and why?

I guess I really like them both. I'm also a fan of Emersons chisel grind. With a Sharpmaker or a Strop I can keep most any Busse or Emerson pretty dang sharp!
 
I like them both, but I put a V on mine because it's easy for me to precisely maintain with my Wicked Edge.
 
Depends on the knife.

Most knives that see woods, will often have a V grind for ease of field maintenance, while most of my traditionals and food use knives will have a convex to lower any binding associated with a bevel.
I only notice the difference when I am trimming fat off of a loin and not going through the silver, or other detail oriented work (I am a Butcher by trade).

Our Bill here, can sharpen a knife. The one he sent me had a mirror polish convex and could make curlicues off your fingernail like balsa wood. Sharpened freehand. He wasn't impressed with the edge, he called it ok, but could have taken it a lot farther. :eek:
 
That's pretty much the running joke around my workplace...

Convexed. They really do seem to be more durable than a v grind.

I'm on the convex wagon as well. I just converted last year and really enjoy how easy it is to maintain. It almost makes me sad in a way because maintaining is usually just a minute of strop time with black then green. I do enjoy sharpening knives and convex has almost taken that away (except for the initial re profile lol).
 
Convex of course...but as zmbhntr said....v is what I use due to the WE system....but I guess I could say "blended" convex, I get those shoulders knocked down.
 
So a V can get sharper,
but convex is more durable, chips less, and keeps an edge longer...

but here's the thing, you can get a convex edge hair popping sharp, so how much sharper do you need in working knife???

Convex for the win !!!

p.s. Convex is usually harder and more expensive to produce so many knife makers don't like it.
 
Convex all the way. I wasn't a fan until I got an InfiDu with an awesome convex edge and wow, what a slicer! I'm not s fan of the full convex blades but thought and I do have a bunch of knives with v grinds.

For those with a WE system, are you able to use it to maintain a convex edge? The WE website claimed it's good for that, but their description of how it works sounds much more like a series of angled edges than a true convex.

It works well, but is tricky, and I did not get great results on convex edges until I started looking at the edge through a microscope (loupe would work too). I had the same concern you did about the edge angles, but they actually to blend together well. That marker along the edge trick is not precise enough for the convex edges, don't trust it, you have to look with magnification.
 
I'm actually a bit surprised by all the convex love in this thread. Don't get me wrong, a convex grind is great and has it place. That being said, I think many people here that think the convex grind is much better have never experienced an optimized flat grind, V grind, or hollow grind. From the Busse factory the convex grinds do tend to be sharper and better slicers than the V grinds; however, if you are willing to sharpen your knives and do a little bit of re-profiling, you will be amazed what a nice V grind can do on a Busse once you knock the shoulders back a bit (or a lot depending on the knife). If you are worried about edge damage for a hard user, you can always re-profile to a nice low DPS and then add a little bit of a microbevel on it, INFI can handle it!

In my mind, the perfect grind for a chopper would be convex. Hollow for a EDC :cool:

That's the same conclusion I came to but I'm fairly new to all this. I'm loving all the opinions and pros/cons of each grind.
