I usually have a few different setups depending on day hikes, camping, backpacking and hunting.
For all adventures, I have a SAK (usually my Rucksack or Huntsman).
For Hunting, my work-horse skinner is my Dozier Pro-Skinner. My little handy Firestone belt-axe does a great job for heavier chores. Along with my SAK, I usually carry my older Leatherman Wave. Of course a simple lockback such as my Ritter RSK-1, AFCK or Spyderco Military typically make the front pocket. Lastly, I like to carry a small folding saw such as Gerber or the Kershaw (Finnish saw).
For day hikes, it could be as simple as a folder (or two) and my SAK, however I'm usually trying out new blades on day hikes, so I typically carry several. I usually go with a smaller fixed blade; I like Roselli, Dozier, Mora, Fallkniven F1 and sometimes a few customs from my safe.
For backpacking/camping, it really depends on the area. I like to carry a big blade, but if I know it's going to be damp and the need to do a lot of log-splitting is expected, I'll carry my Roselli Hatchet or my GB Wildlife hatchet. For a big blade, I really enjoy my Bark River EVO-1...however, I've taken my Livesay RTAK, Ang Khola 15" or (if lighter vegetation), I'll take one of my Ontario 12" machetes; I have since added Fehrman's Extreme Judgement, Siegle's HoodlumII (on it's way to me in Iraq right now), and will eventually get my Patton 10" chopper to play with...I plan to get some good field testing done, but won't get any good camping until next year (2008). Since I usually have a hatchet or large blade, I typically go with a 4-5" fixed belt knife. Some of my top pics that have been taken out are my Fehrman Last Chance, Busse NOe, Mission MPK-10S (excellent knife for the price I might add), TOPS Pasayten (excellent knife, and one of my favorites) and Blackjack's Model 5 (nice classic)...I'll hopefully get to try out BGoode's Trailsman and Razorback's Nessmuk after redeployment as well. I usually carry another smaller fixed blade for minute chores...I've really grown to love AG Russell's little Woods-Walker in a neck sheath. Of course, I'll carry a folder and my SAK. Also, I usually add a folding saw.
