Which one do you use for stock removal and why do you pick that one for stock removal

The wheel is generally faster at removing stock, especially a serrated one. I know several people who hollow grind on a large wheel before flat grinding, I rarely flat grind, but also like doing it this way. Heavy stock removal puts a lot of surface area on the platen at once and can bog it down - flat grinding is the only way I've ever stopped a 2hp motor.
 
I would suggest purchasing both types for grinding steel. You will always need the platen for grinding steel, to may sure all is flat and right. :)

But if you are planning on hollow grinding your blades out. You will need the wheel to do that. I would not recommend shaping out a knife with the wheel. And the reason is, by utilizing the wheel it would created a rounded radius on your work. The platen is for flat grinding and shaping steel material. ;)

So, if you can afford to purchase both then do so. But if you can not, then go for the platen. You can always get the wheel later on down the road. Hope this was of help to you and look forward in seeing some of your creations. :thumbup:
 
I like the wheel for everything that doesn't have to be flat...then it has to be the platen.

The wheel grinds so much smoother, easier, faster, and with much less horse power......but it won't grind flat.

I usually cut mine out on the band saw the set the workrest square to the platen and take it down to the scribe line.
