when do I heat treat

I am making a knife and at this point all cutting and grinding are done I have sanded the blade with an 80 grit then a 150 I plan to go up to an 800 or 1200 grit to get a nice polish ..at what point should I harden the blade?

Some folks are different, I get my blade to 90% finished then send to HT. Sometimes I get carried away and go the whole 9 before I send it out though.
 
What steel are you using?
I take air harding steel up to 400 or 800 grit before I heat treat, but I use a stainless steel foil tool wrap.
For carbon steels I go to 220 to get the deep scratches out then heat treat.
