I have the utmost confidence in my Becker BK9 and my HEST. I'd like to point out that you could get both for less than your price cap.

I wouldn't have any trouble trusting any of my fixed-blade knives for the purposes you describe, from my slim Carter necker to HEST right up to a 4lb kuk.

If I had to pick one to do all tasks, it would probably be my Koster WSK; I've chopped and pried with it, but it's light and handy enough to use as a knife (and a draw knife, too). I wouldn't want to process wood with a HEST!
