When to hollow grind

What knives benefit from hollow grinding. I believe skinners would not benefit being hollow ground because it may increase resistance cutting meat from a bone. Same with utility or cooking knives. What sort of user would benefit from a hollow grind.tyB

a santoku is hollow ground as well as most Japanese knives and they are slicing demons. however other than that the only knives i like hollow ground are pretty much nothing. however i have a buck vanguard with gut-hook and its hollow ground as well as their entire line and they all cut really well
