I've not owned one but Winklers hunting and/or skinning knives look similiar to me. The steel 80crv2 iirc would be superior too but obviously more expensive.
actually, the difference between KaBar's 1095Cro-Van and 80CrV2 isn't that significant performance-wise depending on heat treat and 80CrV2 costs less in small batches.
the difference in performance curves between 80CrV2 and plain 1095 is somewhat more pronounced, but the biggest difference is in easy of HT, as "pure" 1095 can be finicky.
Edge retention and sharpening no but 80crv2 is a considerably tougher steel generally. In considered daily use most probably won't notice this but it matters to me and I'd guess many others. Yes I get your point about HT but I'm pretty sure Winkler do an excellent job here.
