Where can I order 3.00 mm thick bar stock?

3.00mm is common blade thickness for factory knives yet no place seems to sell this. The closest is 1/8" inch, which is 3.17mm, and this thickness is commonly available.

I'm looking for S30V in particular.

If you want to do that then order steels from Europe !! Try www.brisa.fi A good steel would be RWL-34 which is equivalent to CPM154.
