I have an Emerson cqc-7 that I would like to modify with a backspacer that extends further to cover as much of the top of the knife as possible. Is this something that must be custom made or are there off the shelf parts like I assume scales that would be available for the knife? If it is available, can you please point me in the right direction? thank you!

It'll probably have to be custom made. I'm quite sure a scale maker around here could do it for you.
