I get mine from MSC (Manhatten Supply Company) can't remember which grade. If someone else doesn't answer your question I'll check mine and post the type and catalog number. It will be next evening before I can make it back to the shop.
www.midwestknifemakers.com has high-temp 309 by the foot. Nearly all the foil I've come across is .002" thick. I've found it .003" but it's Type 321 (lower temp).
alexmin: 2150 is the maximum Austenitizing temperature for 10V. I'd go with 2075F-Right in the middle of the range. 2100F foil will be fine, even if you go up to 2100F.
