Being new to grinders I assume they can make a mess. So I'm guessing that grinding next to the wife's car and storage would create an unwanted layer on everything so is it best to wait and set up in a separate shop area? or have the typical garage items co-existed with knife grinding?

Put the grinder on a cart with locking rollers. Roll it out into the drive or the side yard and grind away. Sweep up or blow off the dust when done and roll it back into the corner.
A lot of guys make a sturdy 4-6 foot long workbench from 2X6 lumber, with rollers on the legs, and roll the whole bench outside.
