Schrade made a peanut-like pattern in the Old Timer line, the 12OT. Carbon steel, incredibly consistent fit and finish, common and affordable in the usual secondary markets. Better made than, but not as fancy as, my similar Case knives.
The lower knife is Santa Fe Stoneworks / Camillus that isn't bad either, but not sure if it's carbon or stainless.

For many years the Old Timer Jr. Stockman was my EDC. I bought it when I was a kid, and no sophisticated shopper. I’d never heard of fit and finish, or walk and talk. I just knew I had a neat knife.
As a teenager I was more discerning. Any new knife I considered, I carefully checked the quality. By then I carried the small stockman plus a larger knife for larger jobs. Typically a trapper or large stockman.
Funny thing though…I never gave a thought to the quality of my Old Timer. When I’d sharpened the blades down to toothpicks, I bought a new Schrade Jr. Stockman. I never gave a thought to the quality of that one either. I never needed to.
