Which Company Makes The Best Chinese Knives?

Not sure. There are practical considerations on size and weight. Here is a video of someone using it to sharpen an 8" kitchen knife. He mentions compensating for the size and weight distribution by keeping the handle steady.

Thanks for the video. I did quite a bit of looking into the KME yesterday after we talked and I think I'm going to get one. Just deciding whether to get the 200 dollar one and then add a base, and "the beast" diamond stone for reprofiling, or just get the full kit for 320. I'm pretty frugal though.

Hey I do have one question for ya. They sell that "stone thickness compensator" so if your stones are different thicknesses it won't affect your angle. But I plan to pretty much only use their Gold series diamond stones. Do you know if they are all exactly the same the thickness anyway, or do they vary a little bit to where that stone thickness compensator is necessary.

Those are supposed to be the same thickness. So long as you stay within the series, you shouldn't need the compensator.

Ok sweet man thanks for the info, that's what I was thinking and hoping for. I've been mulling it over for the passed few days and I think I'm going to go ahead and grab one.
