If you're not hammering out your knives, you want CRA or HRA, the A is for annealed. It's easier to work soft
1095 requires a faster quench and closer temperature control than 1080/1084 because of the higher carbon content and lower alloying element content. So, I'd recommend starting with 1080 or 1084.
