Which of these is the best choice?

Fixed blade knife. Want it to trim up racks of ribs, some light camping chores, maybe clean (fillet if possible) a fish or two.

Buck 102 or 105 (are they too thick to fillet?)
Boker Arbolito stagknife (I think it would be too thick, but good for everything else and seems to be a really good buy for 55 bucks)
Boker Plus 02BO371 Bandit (is it too short for cleaning a fish?)
Mora Companion

I can get the first three for about 50-60 dollars. Bandit for about 35. Obviously the Mora is less expensive.

Anyone have any solid reasons for one over the others?

I'd go with the Mora. I have 4 of them, (3 are a BahCo versions with Stainless Steel). I do everything you're looking to do, and I can say the steel holds an excellent edge, the sheath is easy to take on and off but is secure, sharpening is easy, and the grip is exceptionally comfortable.
