Of the simple stainless steels, ignorant of the use and purpose of the knife, which one gives you the warmest feeling when you see it stamped on a blade. Choose 2.

Steel choice doesn't usually have anything to do with my purchasing decisions. Some heat treat information (or at least a tested RC), would be nice.

Is this another "Blondes, Brunettes, or Redheads" choice?
Can I pick three?

N690 is pretty good stuff, I don’t have experience with VG-10, but I hear its about the same. Don’t have experience with any others except 14c28n, but the 690 and vg10 have better edge retention for sure.

There is AEB-L in CRK damascus and some custom makers use it. It is tough and can go to 63HRC... so I guess I will give a vote to AEB-L.

I don't know AEB-l, but I like the others pretty equally. S30V is still my all-time favorite.

Firstly, none of these are what I'd consider "prestigious" steels. That said, most of my knives see little hard use so if I was buying a new knife, I'd take any of those listed except for 14c28n. Why? No specific reason, I just own or have owned knives in all the other steels and they've all been fine users that are easily resharpened. My personal favorites these days are CTS-XHP, S35vn, and M390, so definitely help yourself to a few grains of salt.
