Which of your folders is the best kitchen performer?

From the knives I've experimented with in the kitchen, the ones that are exceptional users are

Spyderco Endura PE
Sebenza
Spyderco Perrin

and for those days of cutting up a roast, Spyderco Temperance.
 
This is an odd question.

IMHO there are lots of better knives for the kitchen than a folder. Its a pain in the patoot to get peanut butter-and jelly out of the guts when sllicing PJ sandwiches in half.

Also if you have to share hlaf of a jelly donut with one of the kids/dog it can get to be a cleaning nightmare with a folder.

However, if I had to pick one I would pick the Boker ceramic. Doesn't rust. Never needs sharpening.

Both Victorinox and Spyderco make small serrated paring/chef size knives that are the most awesome cutting kitchen knives I have seen. They are not EDC however.

That AG Russell Hocho is really just the thing for the kitchen when travelling, whether it be at a hotel or campground. It does have few other uses, though.

However, the best all around folder for the kitchen is my Lagioule folder. It also has a corkscrew, since wine is indespensible while cooking. :D
 
Those A.G. Russell/Honchos look perfect for kitchen work!

I just use the same old EDC, MT L.C.C. -it seems to be good for about everything and that's how it got to be the EDC! :D
 
Opinel #10. Hands down the best "kitchen folder" I've ever used.

Have to check out the Hocho knives from AG Russell... They look pretty sweet.

Similar to the Spyderco Catcherman that STR favors, I like my Rapala BP405F Folding Fillet Knife. This has a thin 5-inch blade made of a very fine stainless like 12c27. The thin and long profile easily goes through stiff vegetables or any kind of meat. It takes a true razor edge. It is definitely not a chopping knife. The blade is removable via a screw that is slotted for a coin. Since it is a fishing knife it is really designed to be cleaned after messy work. It is also inexpensive.

Best kitchen folder? Hands down my Buck 560. Light, good grip, thin enough to be a real good slicer and when you're done, easy clean up. Even my wife looks for this one.
 
I actually use my Kershaw Mini Task a lot in the Kitchen and while BBQ'in. Second I would have to say my Calypso Jr. Other than that I don't really use folders in the kitchen.
 
My full size Calypso does a fantastic job int he kitchen, 4" of thin flat ground sharp, translucently thin tomatoes, chicken falls apart, etc.

I edc a BM42 pretty often, and it does a good job as a break room prep knife. Cuts up a bagel and spreads cream cheese like a champ, cuts a sandwich or an apple with ease, and cleans up easily afterwards too.
 
Military and Catcherman.

Calypso Jr. for small jobs.

The Temperance makes a great kitchen knife too....even if it is a fixed blade. :p
