Recommendation? Which one would you get rid off?

I wouldn't sell either unless you really need cash. It's a buyer's market for secondhand knives at the moment, so unless you actually need to sell, I don't see what's to be gained.
 
If you are not in great need for the money, just keep them both for awhile. The answer will likely come to you eventually. Never hurts to have a good backup if you can afford it.
If you rush the decission, you likely will regret it latter, and waste money buying back.

Both being fantastic knives, with great character and colors, The Sebenza IMO has more "soul" and a warmer appearance with that natural burl inlay, compared to the fluted all Ti Herman scale, which appears colder...
Personally I'd keep them both, since they are so different, and could both individually serve to accentuate different scenarios, outfits, etc. But if I had to choose, between those particular models, I'd keep the sebbie.
 
Another trick I learned when seriously stuck in an "either/or" scenario, is to flip a coin over it.
Flip it high, and while it is in the air, think whichever side you really hope it doesn't land on, and keep that one (regardless of the outcome). It forces your brain under timed pressure to pick a true favorite without over thinking.

If you really truly still cannot choose, flip again and just go best of 5 and let the universe decide for you.
 
As a life long Sebenza fan, the Sebenza will be easier to replace, because.... the Herman is very nice, wich has the thinner edge?
 
Watch The Bachelorette. See how she agonizes over which one she cannot live without. Then to whichever you choose to sell just say, "I never meant to hurt you. Goodbye.".
 
Seems obvious to me, keep both. Especially if finances aren’t an issue. After a lengthy period of time, if one becomes easy to part with then let it go. But I must say your rule to only have 1 nice folder seems a little ridiculous. Just start a new rule and don’t buy anymore knives. Problem solved 😉
