which Sharpening System ?

Like Greg I also use the DMT Aligner system. It is great, but difficult for large blades. I would not recommend it for anything larger than 8" or as Gred stated about 1/4" thick.

I don't know if I'm alone in this, but I generally realign with the DMT and then put the final edge on with a steel. I can get an arm shaving sharp edge this way pretty easily with the lower quality steel of most my knives.
