Which steels do you enjoy using the most?

My two favorite SS are VG10 and S30V. I only use folders and my cutting tasks haven't varied much in 50 years, so these two are my favorite user steels for my folders.

The fave is Case CV or 1095 carbon steel. Haven't found any kind of stainless that will take a sharper edge. That said, the 13c26 in the Kershaw Storm II I picked up about a week ago is really growing on me. Seems to get real sharp and maintain it for a while.

I do have some of the supersteels like S30V, S60V, etc. They seem to hold an edge well but not that sharp. Also kind of brittle and a bastard to sharpen. Maybe I need to try ZDP or VG10...

I work with 1095 every week in my shop. As a knifemaker I would want a knife made out of the steel the knifemaker has most experience with and is most comfortable working with.
My personal favorite is 1095.....

I have a Spyderco in ZDP and s30v and I think the ZDP is slightly more brittle than the s30v. I shopped for edge retention, and the brittleness caught me by surprise. I'm trying VG10 for a little while now.

Nosetotail, I was kind of thinking the same thing. VG10 seems to have a well-rounded combination of attributes that I could find useful. However, I am going to at least try exerting some self control before any more purchases... ;)
