Which steels would be best suited for a Dagger

I wouldn't select a dagger for regular EDC. That being said toughness and not necessarily wear resistance is needed. One wouldn't want the blade breaking on a rib. L6 was great in those old gerbers. I used to have one and got rid of it because it wasn't practical for me even though it was built well and could shave hair with either edge. Laws and practicality ruled against it in my case. In stainless 440A or 420HC are great. Fairly tough, decently stainless and perfect for a blade that sits or carries more than cuts. S30V, while tough for a high carbide high wear stainless is probably better left for other knives.

Pretty much all of old timers at one time or another had the old Camillus/western double edges boot knife in 420HC. Despite having it for years I probably only cut with it once. That was enough to see my Camillus Barlow in 1095 was a better slicer.
 
I EDC a Spyderco Yojimbo 2, perfect for my chores in the logistics department cutting down boxes like the glorified straight razor it is! I have wanted a dagger since as long back as I can remember. No I won't be EDC'ing it, most likely will attach it to my Maxpedition bug out bag for when teenage zombies from Mars come down for a party on this island Earth (yeah I love the Misfits) :-P
