Which way should I cut this burl?

Is there a call to show so much sap wood. It seems difficult to use sap wood well and those are good sized chunks of light wood. It may lessen the special features of that good heart wood.

its not all about the ssap wood but more of the eyes radiate from the center of the tree out not up/down or across the burl

not that i have cut up that much burl and surly not more then burl source
